Recipe of the Month – BBQ Chicken Casserole

If you’re like most people, then you probably think that eating healthy and eating meals that are delicious is impossible to do at the same time.

It’s really not that difficult, I promise!  There are LOTS of healthy recipe bloggers out there, you just have to find one that you like!  But for those of you who are a bit more adventurous and want to create meals on your own, just keep these things in mind:

Protein

The foundation of any meal, healthy or not, is usually a serving of protein.  Wether you like fish, pork, chicken or beef they can all be extremely healthy.  Try to avoid deep fried (usually in corn oil, gross) versions of those meats and opt for the grilled, blackened, baked, or steamed variations.  I particularly love eggs, and when pickins are slim at the end of the week, I’ll sometimes make a breakfast burrito for dinner.  (Of course, sustainably raised, environmentally conscious, grass fed free ranging meats should be what you’re putting in your cart.)

Fat

The next component of a meal is fat. This part is usually super easy.  My favorites are avocado, butter, macadamia nuts, almonds/almond butter, coconut oil and even cheese.

Carbs

Finally, the last piece of the puzzle are carbs!  This is usually everyone’s favorite macro nutrient, and also very easy to figure out.  Keep in mind that it can also easily become the least healthy part a meal.

Your best options will be sweet potatoes, veggies, berries, and small amounts (e.g., 1 serving) of fruit (think the size of an apple).
